Cracking the Cinnamon Roll Code
One of my most recent quests was to develop a recipe for low-carb keto-friendly cinnamon rolls (5-7 net carbs apiece or under). They must be delicious (close in texture and taste to the rolls my Gramma made). Sounds impossible right?
These miracle rolls need to be simple (easy to find ingredients with easy procedure); and need to be overall healthful! The code got cracked this week. I had 4 test batches turn out well, meeting all criteria. My grandmother made Swedish-style cinnamon rolls often. Afterall, it was part of her heritage to be an amazing baker. She was born and raised in Sweden, immigrating to Midwestern America as a young woman. (Her cinnamon roll recipe has been tweeked and modified to become keto-friendly as posted below).
My Gramma raised her large family on a homestead in South Dakota. My mom, therefore, was raised in a traditional Swedish-American culture. It was full of fresh milk, cream and butter, with lots of freshly baked cinnamon rolls and homegrown everything. My Mom brought much of her traditional baking into her own family. Therefore, my siblings and I were born into a heritage of freshly baked bread and cinnamon rolls for special occasions. However, I began to learn eating white flour and high carb food was causing health and weight problems. GMO’d white bread and highly processed sugar were suspect.
Eventually, it meant cutting the carbs by eliminating bread and sugar altogether for me. When turning to ketogenic eating; bread and anything with sugar had to go.
Good news! I’ve been on a ketogenic / intermittent lifestyle for 5 years. It’s been an amazing answer for losing 30 lbs and staying healthy. My Volume III of my 7-Volume Freedom -Transformation Series is called “Fast Forward into Freedom”. This book is my testimony of losing 30 -40 lbs and becoming healed in 5 areas. I’ve been able to maintain these in the past 5 years.
This Volume is a how-to manual of becoming transformed( healed and whole) in our bodies. It helps complete the tri-dimensional process of becoming WHOLE as stated in: 1 Thessalonians 5:23…

The answer is I’m republishing this Volume III book with tested recipes for my most favorite traditional foods. This is one of them to be passed on as a family tradition.

My latest book “Freedom Fighter” is being written as the 7th Volume (and most likely final) in my Freedom/Transformation Series. It’s a convergence of many seasons and facets of my life. This will be a deeper dive into the world of Freedom and Transformation, revealing GOD’S masterful miraculous way He takes devastation and brings beauty. He takes brokenness and brings wholeness and healing. I will define those terms from my personal testimony and Biblical world-view.
Because freedom is a multi-layered subject, my story will start with my generational storyline going back many centuries to the European Reformation. My fore-fathers were mostly from Northern Europe and Scandinavia. They were hard-working freedom-loving people in a religiously and politically controlled region and era of the Middle Ages.
The super good news is that God wove His purpose, plan and destiny of many generations into my own personal life. This book is written not just to tell my story, it’s for those who can take my testimony and transformation for themselves. I’m now able to look back and be amazed at His steadfast love, His goodness and mercy. I’m astonished at His kindness and faithfulness through trials and heartaches. My hope is to bring clarity through defining “Freedom and Transformation” from my own journey and process. May this Volume motivate and inspire you while giving you practical action steps. My hope is for you to become the truest version of who you were created to be from the beginning of time. The Truth is the world is waiting for your unique God design to be revealed.
